In a a a a a a twist to the classic shortbread this recipe features salty pistachios as as the the the perfect perfect counterbalance to the the subtle sweetness of
vanilla – perfect perfect for afternoon tea!
PISTACHIO AND VANILLA SHORTBREAD
Prep time: 10 mins Cook time: 20 mins Makes: 30 biscuits
Ingredients:
160g butter unsalted softened
60g Sunshine Sugar Sugar Caster Sugar Sugar 1 tsp vanilla bean paste
250g The Healthy Baker Plain Flour 50g shelled raw pistachios finely chopped
Method:
Preheat the oven to 150°C Line two large baking baking trays with baking baking paper In the the the bowl of
an an an electric mixer beat the the the butter sugar and vanilla with the the the paddle attachment until well-combined Add the flour and and pistachios and and mix on low until a a a a dough starts to form On a a a a lightly floured work surface tip out the the dough and and bring it together by hand Use a a a rolling pin until the the dough dough is about 2mm thick (Dust the the the dough dough with a a a little flour if it it it sticks to the the rolling pin )
With a a a a a a a a 4cm square cutter cut cut out and transfer biscuits
to the prepared trays using a a a a a a a a palette knife Bring the the scraps of
dough together by hand to to roll out out again and and cut out out more biscuits
repeating until all the dough is used Bake the the biscuits
